I believe a mexican restaurant is determined to be good based on their salsa. I have never been to a "good salsa" restaurant where the food is bad, and I have never been to a "bad salsa" restaurant where the food is good. Mark my words. Try me. Go ahead.
Quick Salsa Recipe
1 can rotel
4 green onions (tops chopped off)
a handful of cilantro (don't worry about peeling the leaves off)
Put the rotel and green onion in a blender and blend according to your liking. Add the cilantro and blend in short spells. (The cilantro leaves will be diced but not pureed.) Oh man, this is the stuff right here. Eat it up, though...there are no preservatives so it won't stay around more than a day and a half or so. This is a good excuse to make breakfast tacos. Oh yeah, baby.

Reality
Okay, so I have decided to make my second post and I promise, PROMISE that my third post will actually have a recipe. I have decided that I will use this blog to post comfort foods....foods that warm the soul, make you smile to yourself, bring families together more than once a year, or just for the love of good unhealthy eatin'!
Do I eat like this all the time? No. I am actually right smack dab in the middle of trying to lose about 15 pounds. But I discovered that family will probably be the only ones viewing this blog...so it is with a big heart that I dedicate this blog to Elzie and Elsie Walker...the two individuals that always brought us together once a year to enjoy one anothers company and eat two or three times before parting ways. Each one of their grandchildren lives in another town, state, or even country. I offer these recipes that we can share together across the miles....if you decide to make something I post remember the good times. :)
